The students will be able to
  • define the constraints of food handling, storage and logistics chains in the context of international food trade and marketing
• apply food laws and regulations to international food trade and logistics to assure food safety, including chemical, microbiological and radiological safety, as well as food hygiene and allergy and communicate with relevant authorities
• justify the food labelling and the selection of various packages and packaging materials for different products and logistic chains
• understand the globalisation of the food industry and analyse the changes of market structure specifically in the Baltic Sea and European markets

  • Relevant food laws and regulations (Codex alimentarius, EU directives, Estonian and Finnish laws on food safety and labelling)
• Basics in food logistics and operations
• Food packaging and labelling
• Food industry structures in the Baltic Sea countries and in other European countries
• Description of the food industry sectors in various countries
• Definitions, statistics and indicators of food industry sub-sectors

 
Description
  The competence gained in the study unit is to understand and interpret laws and regulations on food safety and quality management in international food trade and logistics. The students will be able to professionally plan food trade projects.

Students will acquire skills to analyze international food markets, distribution structures and competition. They will learn the effects of different market structures on food firms and their products, and the relation of markets to internationalisation strategies.
